New Toronto restaurant is booked solid for months and it hasn't even opened yet

A much-buzzed-over Toronto restaurant that hasn't even opened yet is already booked solid for months.

Despite not being set to open its doors until Sept. 26, the new Toronto location of iconic international Greek restaurant, Estiatorio Milos is already the talk of the town.

Initially rumoured to be taking over the former Momofuku space at the Shangri-La Hotel (a position since filled by acclaimed Chinese restaurant, Mott 32), the restaurant is currently polishing off the finishing touches at their actual Financial District location — which served as an after party location for a number of TIFF premieres.

The Montreal-based restaurant, founded in 1979, has expanded to locations in Athens, Dubai, London, Las Vegas, Los Cabos, Miami, Singapore and New York in their 45 years, earning accolades and a considerable following all the while.

Now, the chain will be adding a second Canadian location to its fleet, and it's already gearing up to be one of the hottest restaurant openings of the year.

After officially opening OpenTable reservations for the Toronto location in late August, Estiatorio Milos almost instantly booked completely for its opening weekend.

In fact, it completely booked up for the next month.

At the time of publication, anyone eager to try a taste of Chef Costas Spiliadis' iconic Mediterranean menu will have to wait until Oct. 15 to get a seat, and even then, you'll have to be cool with dining at either 5 or 9 p.m.

Weekend availability is even more dire — if you're hoping for a 7 p.m. reservation on a Saturday, the earliest you'll be able to get one is Dec. 7.

Luckily, there's a host of great Greek and Mediterranean restaurants in Toronto that'll satisfy your cravings in the meantime, but if it's Milos that you have your heart set on, you'll have to get comfortable while you wait, but, hey — doesn't waiting for it make it take even better in the end?
