Cauldron Ice Cream is a California-based chain of ice cream parlours, making ice cream to order in inventive rotating flavours using liquid nitrogen.

They’re also known for carving Insta-worthy rose designs into the ice cream and serving it in bubble-waffle-style “puffle cones.”

Why the name Cauldron? It’s instantly obvious from watching your order being created in the open concept space before your eyes in a matter of minutes.

Liquid nitrogen billows down from pipes made from NASA-grade materials installed in the ceiling into mixing bowls. The “smokey” look the chemical produces making each one look like a bubbling cauldron.

Puffle cones are $7.99 including a scoop of ice cream, made to order and come in three flavours: red velvet, churro and original.

All ice cream bases here are all natural, made using Canadian milk and whipping cream so it's super creamy, dense, flavourful and sticky.

You have to ask in order to get the signature rose shape carved into your ice cream at no extra charge, the curved shape of the ice cream scoop capitalized on to create innovative petal shapes.

Rose H2O is essence of rose ice cream sprinkled with rose sugar, and while it’s not as overpowering as it could be (since rose flavouring is very strong), the predominant note is still floral and perfumed.

A small scoop of ice cream dips in price to $5.99. Though the flavours would hold their own without any Instagrammable touches at all and the ice cream is much less drippy in a cup, you might as well shell out the two extra bucks if you’re really looking for the full experience here.

A Sea Salted Caramel Crunch flavour studs a caramel ice cream base with pretzel bits and sea salt. Garnished with a pretzel and caramel drizzle, this is one of the more pedestrian, accessible flavours.

Cauldron Ice Cream TorontoSun, Moon & Stars by contrast is one of the most original flavours, and my favourite combination is probably this flavour with a red velvet cone. Despite the rich mahogany colour, the waffle’s flavour is relatively subtle, but the oolong, green and jasmine tea flavour of the ice cream is deep and toasty.

Apparently this is thanks to steeping the tea leaves in milk for several days. A light honey drizzle on top of this flavour is the perfect accent to set off the aromatic tea flavours.

They also do regular sugar cones here too if that’s what floats your boat. This is the first of several Cauldron Ice Cream locations to hit Toronto.
